Purple Triangle Sorrel has a nice lemony taste and although it doesn’t have such a good flavour attached to it as some of the other Sorrels, it really comes into its own for its beautiful colour and decorative qualities. Like Iron Cross Sorrel, its segmented leaves mean you can break each of the leaves into a really perfect butterfly shape that looks really stunning on the plate.

Also like Iron Cross Sorrel, Purple Triangle Sorrel grows from small corms – little bulbs which we dry out each year at the end of the season to re-plant in spring (they would rot if we left them in the ground). Over the last couple of years, we’ve also started to dry the whole pot (rather than remove them from the soil) developing a kind of winter library.
