Green Fennel FlowerEdible Flowers
Fennel Flowers are a beautiful, bright yellow bouquet of subtle liquorice fennel flavoured mini-flower heads. They grow on the ends of tall, elegant stems, lending an intense burst of colour and beauty to wherever we grow them. We harvest the Fennel Flowers & Seeds at several different stages – from when the flowers very first appear, to when they are very polleny, or when they get a bit larger and then just before the seed forms and then when the seeds are fresh and green. I am constantly captivated by the Fennel plant and how one thing can be quite so amazing!! From the shoots, stems, leaves, bulbs, fronds, roots, flowers and seeds – the entire plant is edible and can be used in so many different ways. Even when the stalks dry after harvesting every last part of the plant, we cut these down to dry further and use them to smoke food – something that many of our chefs request regularly.
The delicate anise flavour of the Fennel Flowers makes them an ideal ingredient in summer dishes like Yotam Ottolenghi’s White Fish, Grapefruit and Fennel Ceviche, or using their aromatic pollen for recipes like Hank Shaw’s Greek Party Bacchus Biscuits or Fennel Pollen Pasta.
