Edible Flowers

Anise Hyssop is one of the most flavoursome and interesting of the edible flowers. The flower heads are made up of a mass of fragrant bright blue-purple tubular shaped mini flowers. As with the leaves of this plant, the flowers have a great aniseed flavour adding delicate splashes of colour, sweetness and complexity to any dish. The flower heads can be separated into individual tiny flowers to finish a range of sweet or savoury combinations – from jellies, ice-creams, biscuits and pastries to soups, salads, refreshing summer drinks and cocktails or even to cure salmon!
